This is Edna's favourite recipe which she has been making for a long time now.
Vetkoek = "Fat Cake".
Enjoy!
You will need:
1 large bowl
1 large frying pan
1 wooden spoon
500g (1 large block) butter (kept a room temperature)
1 tin/bottle (500g) golden syrup
1 butter knife
1 spoon
For the vetkoek:
1,5kg cake flour (extra for dusting)
2 x 10g packets of yeast
1/2 cup (125ml) sugar
1 tablespoon (15ml) flour
3-31/2 cups (750-895ml) warm water
1/2 cup (125ml) oil
3 cups (750ml) oil for frying
Mix together the flour, yeast, sugar and salt to taste.
Make a small hole (well) in the middle and add the water and oil.
Mix until it forms a soft dough, then knead for 5-10 mins until the dough becomes smooth and elastic.
Leave to rise in a warm place for an hour or until it becomes double its original size.
Using well-oiled hands, shape the dough into 25 equal pieces. Shape each piece into a ball and flatten slightly.
Shallow fry the vetkoek in batches until golden brown on both sides and coooked through.
Cut the vetkoek in halfw while it's stil warm enough to melt the butter. Spead with butter and the golden syrup.
